Ingredients
  

  • 4 salmon fillets 6 ounces each
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 cups snap peas trimmed
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, lemon juice, lemon zest, and minced garlic to create the glaze.
  3. Place the salmon fillets on a lined baking sheet and drizzle with olive oil, then season with salt and pepper.
  4. Brush the honey glaze generously over the salmon fillets, reserving some for basting later.
  5. Bake the salmon in the preheated oven for about 12-15 minutes, or until it flakes easily with a fork.
  6. While the salmon is baking, heat a skillet over medium-high heat and add the trimmed snap peas with a splash of water.
  7. Sauté the snap peas for about 2-3 minutes, then season with salt and pepper to taste.
  8. Remove the salmon from the oven and brush with the reserved glaze before serving.
  9. Serve the salmon with snap peas alongside, garnished with extra lemon wedges if desired.
