Ingredients
  

  • 3-4 lb pork shoulder roast
  • 1 cup low-sodium chicken broth
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Method
 

  1. Prepare the ingredients by gathering and measuring all components.
  2. Season the pork shoulder roast generously with salt and black pepper.
  3. In a large skillet, heat a tablespoon of oil over medium-high heat and sear the pork on all sides until browned, about 3 minutes per side.
  4. Remove the pork from the skillet and place it in the crockpot.
  5. In the same skillet, add diced onion and minced garlic; sauté until fragrant and the onions are translucent, about 5 minutes.
  6. Pour in the chicken broth, soy sauce, and brown sugar, scraping the bottom of the skillet to deglaze.
  7. Add thyme and stir well, then pour the mixture over the pork in the crockpot.
  8. Cover the crockpot and cook on low for 7-8 hours or until the pork is tender and easily shreds with a fork.
  9. Once cooked, remove the pork and let it rest for 10-15 minutes before shredding.
  10. Meanwhile, you can thicken the sauce in the crockpot, if desired.
  11. Serve the shredded pork with sauce, alongside your favorite sides.
