Savory Walking Taco Bake for a Crowd

Walking Taco Bake made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans 15 oz, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup salsa
  • 2 cups shredded cheese cheddar or Mexican blend
  • 3 cups crushed tortilla chips
  • 1/4 cup chopped fresh cilantro optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add taco seasoning to the beef, stirring to combine.
  4. Stir in black beans, corn, and salsa until well combined.
  5. Spread half of the crushed tortilla chips in the bottom of a greased baking dish.
  6. Layer the beef mixture over the chips, then top with half the cheese.
  7. Add the remaining tortilla chips on top, followed by the rest of the cheese.
  8. Bake for 25-30 minutes, until the cheese is bubbly and slightly golden.
  9. Remove from the oven and sprinkle with cilantro if desired.
