Ingredients
  

  • 2 pounds beef chuck cut into 1.5-inch pieces
  • 1 tablespoon olive oil
  • 4 ounces pancetta or bacon diced
  • 1 large onion chopped
  • 2 carrots sliced
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cups red wine Burgundy or Pinot Noir
  • 2 cups beef broth
  • 2 teaspoons fresh thyme or 1 teaspoon dried
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 ounces cremini or button mushrooms halved
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Sear the beef.
  2. Cook the pancetta.
  3. Sauté vegetables.
  4. Combine all ingredients in the slow cooker.
  5. Cook on low.
  6. Add mushrooms later in cooking.
  7. Finish and garnish.
