Ingredients
  

  • 2 medium zucchinis sliced
  • 1 cup mushrooms sliced (such as cremini or button)
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add zucchini slices to the skillet and sauté for about 5 minutes.
  3. Incorporate the sliced mushrooms and continue cooking for another 5 minutes.
  4. Stir in the minced garlic and oregano; cook for 1-2 minutes more until fragrant.
  5. Season with salt and pepper to taste; finish with a squeeze of lemon juice.
  6. Remove from heat and serve warm.
