Ingredients
  

  • 1 lb Italian sausage
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups kale chopped
  • 2 medium carrots diced
  • 1 can 14.5 oz diced tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sausage and cook until browned, breaking it into pieces.
  3. Stir in the diced onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Mix in the diced carrots, and cook for 3-4 minutes, stirring occasionally.
  6. Pour in the chicken broth, diced tomatoes, and oregano. Bring to a boil.
  7. Reduce heat and stir in the chopped kale. Simmer for 15-20 minutes.
  8. Season with salt and pepper to taste before serving.
