Heat the olive oil in a large pot over medium heat.
Add the sausage and cook until browned, breaking it into pieces.
Stir in the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Mix in the diced carrots, and cook for 3-4 minutes, stirring occasionally.
Pour in the chicken broth, diced tomatoes, and oregano. Bring to a boil.
Reduce heat and stir in the chopped kale. Simmer for 15-20 minutes.
Season with salt and pepper to taste before serving.
