- Heat olive oil in a large skillet over medium heat.
- Add the diced zucchini to the skillet and sauté for about 4-5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the corn, salt, and pepper to the skillet; continue to sauté for another 3-4 minutes.
- Remove the skillet from heat and stir in the grated Parmesan cheese until melted and well combined.
- If desired, sprinkle with fresh parsley before serving for color and freshness.
