Ingredients
  

  • 2 medium zucchinis diced
  • 1 cup corn kernels fresh or frozen
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (optional)

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced zucchini to the skillet and sauté for about 4-5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the corn, salt, and pepper to the skillet; continue to sauté for another 3-4 minutes.
  5. Remove the skillet from heat and stir in the grated Parmesan cheese until melted and well combined.
  6. If desired, sprinkle with fresh parsley before serving for color and freshness.
