  • 2 lbs chicken thighs boneless and skinless
  • 1 cup honey
  • 4 cloves garlic minced
  • 1 lb carrots sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine honey, minced garlic, and soy sauce.
  3. Add the chicken thighs to the marinade and toss to coat.
  4. In a separate bowl, toss sliced carrots with olive oil, salt, and pepper.
  5. Arrange the marinated chicken and carrots on a baking sheet.
