Savory Creamy Mushroom Chicken Delight

Creamy Mushroom Chicken made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 ounces of cremini mushrooms sliced
  • 1 medium onion finely chopped
  • 3 cloves of garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Prepare the chicken breasts by seasoning them with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken breasts until golden brown on both sides, about 6-7 minutes each side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the onions and mushrooms, sautéing until the onions are translucent and mushrooms soft, about 5-7 minutes.
  5. Add the minced garlic and sauté for one minute, until fragrant.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet, and bring to a simmer.
  7. Stir in the heavy cream and return the chicken to the skillet; simmer for 5-10 minutes until the chicken is cooked through and the sauce thickens.
  8. Taste and adjust seasoning with additional salt and pepper as desired.
  9. Garnish with fresh parsley before serving.
