Ingredients
  

  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz kidney beans, rinsed and drained
  • 1 can 15 oz pinto beans, rinsed and drained
  • 1 can 14 oz diced tomatoes (with juice)
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth or chicken broth
  • Optional toppings: shredded cheese sour cream, chopped cilantro

Method
 

  1. Prepare the ingredients by rinsing and dicing as indicated.
  2. Add all ingredients to the crockpot: beans, tomatoes, onion, garlic, spices, and broth.
  3. Stir to combine everything evenly.
  4. Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  5. Once the cooking time is up, taste and adjust seasonings if necessary.
  6. Serve hot with your choice of toppings.
