Ingredients
  

  • 4 large chicken thighs bone-in and skin-on
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 8 ounces mushrooms sliced (preferably cremini)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down.
  3. Sear the chicken for 5–7 minutes until the skin is golden brown; flip and cook for an additional 5 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. Add diced onions to the same skillet and sauté until translucent, about 3–4 minutes.
  6. Add minced garlic and sliced mushrooms, cooking until softened, about 5 minutes.
  7. Pour in the chicken broth and scrape up any browned bits from the bottom.
  8. Reduce heat to low, stir in the heavy cream and dried thyme; season with salt and pepper.
  9. Return the chicken thighs to the skillet, spooning the sauce over them.
  10. Simmer for 10–15 minutes until the chicken is cooked through and the sauce has thickened.
  11. Garnish with fresh parsley before serving.
