Preheat your oven to 400°F (200°C).
In a skillet over medium heat, cook the ground beef until browned.
Add the taco seasoning to the meat and stir in 2/3 cup of water. Cook until thickened.
Remove the skillet from heat and mix in the shredded cheddar and mozzarella cheese.
Lay a tortilla on a flat surface and place a generous spoonful of the meat mixture in the center.
Fold the sides of the tortilla over the filling and roll tightly into a stick.
Repeat this process with the remaining tortillas and filling.
Brush each stick lightly with the egg wash and place them on a baking sheet.
Spray the tops lightly with olive oil.
Bake for 15-20 minutes or until golden brown and crisp.
