Savory Bruschetta with Mozzarella for Your Table

Ingredients
  

  • 1 French baguette
  • 2 large ripe tomatoes
  • 8 ounces fresh mozzarella cheese
  • 2 cloves garlic
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch thick slices.
  3. Arrange the slices on a baking sheet and brush both sides with olive oil.
  4. Toast the bread in the preheated oven for about 10 minutes, flipping halfway.
  5. Chop the tomatoes and garlic, and combine in a bowl.
  6. Add salt, pepper, and 2 tablespoons of olive oil to the tomato mixture.
  7. Let the tomato mixture sit for about 10 minutes.
  8. Slice the mozzarella into 1/4-inch rounds.
  9. Assemble the bruschetta by topping each slice of toasted bread with the tomato mixture and a slice of mozzarella.
  10. Return the assembled bruschetta to the oven for about 5 minutes to melt the mozzarella.
  11. Garnish with fresh basil before serving.
