Pat the pork chops dry and season with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat.
Sear the pork chops for 3-4 minutes on each side, until golden brown.
Remove the chops from the skillet and set aside on a plate.
Add onion and garlic to the skillet, stirring until softened.
Pour in the apple cider and bring to a simmer, scraping the bottom of the pan.
Stir in thyme and apple cider vinegar, then return the chops to the skillet.
Cover the skillet and cook for an additional 5-7 minutes, until cooked through.
Let the chops rest for a few minutes before serving.
