Ingredients
  

  • 1 lb sausage Italian or your choice
  • 2 cups bell peppers mixed colors
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups zucchini diced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the sausage and cook until browned, about 6-8 minutes.
  3. Add the diced onion and sauté until translucent, about 3-5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Mix in the bell peppers and zucchini, cooking until tender, about 5-7 minutes.
  6. Add the halved cherry tomatoes and oregano, cooking for another 2-3 minutes.
  7. Season with salt and pepper to taste before serving.
