Ingredients
  

  • 2 pounds pork tenderloin
  • 2 apples such as Granny Smith or Honeycrisp, cored and sliced
  • 1 cup pitted cherries fresh or frozen
  • 1/2 cup cherry balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh thyme sprigs for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pork tenderloin by patting it dry and seasoning generously with salt and pepper.
  3. In a large ovenproof skillet, heat olive oil over medium-high heat.
  4. Sear the pork for 2-3 minutes on each side until golden brown.
  5. Remove the pork from the skillet and set it aside on a plate.
  6. In the same skillet, add the sliced apples and minced garlic, cooking for about 5 minutes until slightly softened.
  7. Stir in the cherries and cherry balsamic vinegar, mixing thoroughly.
  8. Return the seared pork to the skillet, spooning the fruit mixture over the top.
  9. Transfer the skillet to the preheated oven and roast for 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C).
  10. Once cooked, remove from the oven, cover with foil, and let rest for 5-10 minutes.
  11. Slice the pork and serve with the apple-cherry glaze spooned over the top, garnished with fresh thyme.
