Ingredients
  

  • 8 ounces of pasta
  • 1 bell pepper sliced
  • 1 zucchini diced
  • 1 yellow onion sliced
  • 2 cloves of garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Method
 

  1. Cook the pasta according to package instructions, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced onions and sauté until they become translucent.
  4. Stir in the garlic and sauté for another minute until fragrant.
  5. Add the sliced bell pepper and diced zucchini; continue to sauté for about 5 minutes.
  6. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper; stir to combine.
  7. Pour in the vegetable broth and bring the mixture to a simmer.
  8. Mix in the cooked pasta and lime juice, stirring to combine everything well.
  9. Taste and adjust seasoning if necessary, then serve hot, garnished with fresh cilantro.
