Ingredients
  

  • 8 oz pasta penne or fusilli
  • 1 lb Italian sausage sweet or spicy
  • 1 can 14 oz diced tomatoes
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions.
  2. In a large skillet, heat the sausage over medium heat.
  3. Add the minced garlic and cook until fragrant.
  4. Pour in the diced tomatoes and broth, bring to a simmer.
  5. Stir in the fresh spinach until wilted.
  6. Combine the pasta with the sauce, using pasta water as necessary.
  7. Finish with Parmesan cheese, salt, and pepper.
  8. Serve hot, garnished with extra cheese if desired.
