Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1 cup spinach fresh or frozen
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté minced garlic until fragrant, about 1 minute.
  3. Transfer garlic to the crockpot and add chicken breasts.
  4. Layer cherry tomatoes and spinach over the chicken.
  5. Sprinkle in Italian seasoning, salt, and pepper.
  6. Pour in heavy cream and lemon juice.
  7. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  8. Five minutes before serving, stir in grated Parmesan cheese.
  9. Taste and adjust seasoning if necessary before serving.
