Preheat your oven to 400°F (200°C).
In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, parsley, salt, and pepper.
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
Bake the meatballs in the preheated oven for 20 minutes or until browned.
In a large pot, heat the beef broth over medium heat. Add the diced tomatoes and mixed vegetables.
Carefully add the baked meatballs to the pot and let them simmer for about 20 minutes.
Taste for seasoning, adjusting salt and pepper as needed.
Serve hot, garnished with fresh parsley if desired.
