Thread shrimp onto skewers for easier handling on the grill.

While the shrimp grills, prepare the salad base in a large bowl.
Add cherry tomatoes, cucumber, avocado, and red onion to the bowl of mixed greens.
Once cooked, remove the shrimp from skewers and add them to the salad bowl.
Drizzle with any remaining dressing, toss gently, and serve immediately.
