Refreshing Grilled Shrimp Salad for Warm Days

Grilled Shrimp Salad made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber thinly sliced
  • 1 avocado diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Method
 

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine shrimp, olive oil, lime juice, salt, and pepper; toss to coat.
  3. Thread shrimp onto skewers for easier handling on the grill.
  4. Place the skewers on the grill and cook for 2-3 minutes per side until opaque and slightly charred.
  5. While the shrimp grills, prepare the salad base in a large bowl.
  6. Add cherry tomatoes, cucumber, avocado, and red onion to the bowl of mixed greens.
  7. Once cooked, remove the shrimp from skewers and add them to the salad bowl.
  8. Drizzle with any remaining dressing, toss gently, and serve immediately.
