Ingredients
  

  • 12 ounces pasta rotini or penne
  • 1 cup cherry tomatoes halved
  • 1 cup corn fresh or frozen
  • 1 red bell pepper diced
  • ½ cup red onion finely chopped
  • 1 cup cilantro chopped
  • ¼ cup lime juice about 2 limes
  • ¼ cup olive oil
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions.
  2. Drain the pasta and rinse it under cold water.
  3. In a large bowl, combine the cooked pasta, cherry tomatoes, corn, bell pepper, and red onion.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  5. Pour the dressing over the pasta salad and gently toss until everything is well coated.
  6. Add chopped cilantro and toss again.
  7. Taste and adjust the seasoning if necessary.
  8. Chill for at least 30 minutes before serving.
