Ingredients
  

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Prepare the couscous by combining it with boiling water in a bowl, then cover and let it sit for about 5 minutes.
  2. While the couscous is resting, chop the vegetables: avocado, cherry tomatoes, cucumber, and red onion.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to create the vinaigrette.
  4. Once the couscous is fluffed, add the diced vegetables and cilantro to the bowl.
  5. Pour the lime vinaigrette over the couscous mixture and gently toss to combine.
  6. Taste the salad and adjust the seasoning with additional salt and pepper as desired.
