Ingredients
  

  • 2 cups fresh or frozen peas
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice optional

Method
 

  1. Sauté the onion and garlic in olive oil.
  2. Add the peas and broth.
  3. Season with thyme, salt, and pepper.
  4. Cook under high pressure for 3 minutes (Instant Pot) or simmer for 15 minutes (stovetop).
  5. Blend the soup until smooth.
  6. Finish with lemon juice (if using) and adjust seasoning.
