Ingredients
  

  • 4 bone-in pork chops 1-inch thick
  • 1 cup apple cider
  • 1 tablespoon olive oil
  • 1 medium onion sliced
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • 1 tablespoon Dijon mustard

Method
 

  1. Pat the pork chops dry and season with salt and pepper on both sides.
  2. In a large, heavy-bottomed skillet, heat the olive oil over medium-high heat.
  3. Sear the pork chops for about 4-5 minutes per side, until golden brown.
  4. Remove the chops from the skillet and set aside on a plate.
  5. Add the sliced onion to the skillet and sauté until translucent, about 5 minutes.
  6. Stir in the apple cider, Dijon mustard, and thyme sprigs, scraping the bottom of the skillet to deglaze.
  7. Return the pork chops to the skillet, nestling them in the liquid.
  8. Bring the mixture to a gentle simmer, then reduce the heat to low and cover.
  9. Cook for about 30-40 minutes, or until the pork is fork-tender.
  10. Remove the pork chops and allow them to rest before serving.
