Ingredients
  

  • 12 taco shells
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans canned, drained, and rinsed
  • 1 cup corn canned or frozen
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • Sour cream or guacamole for serving

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef or turkey over medium heat.
  3. Drain excess fat, then mix in the taco seasoning and a splash of water.
  4. Stir in black beans, corn, diced tomatoes, and chopped onion, mixing well.
  5. Arrange taco shells in a baking dish and fill each with the meat mixture.
  6. Top each filled taco with a generous amount of shredded cheese.
  7. Bake in the preheated oven for 15-20 minutes until cheese is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Garnish with diced tomatoes, cilantro, and serve with sour cream or guacamole.
