Ingredients
  

  • 1 cup dried chickpeas
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14 oz
  • 2 cups fresh spinach chopped
  • Salt and pepper to taste

Method
 

  1. Soak the dried chickpeas overnight.
  2. Drain and rinse the soaked chickpeas.
  3. Sauté onion, garlic, carrots, and celery.
  4. Add spices and cook for a minute more.
  5. Add the soaked chickpeas and broth.
  6. Stir in the diced tomatoes and simmer.
  7. Simmer the soup for about 30-40 minutes.
  8. Add the chopped spinach and season.
  9. Serve hot, garnished as desired.
