Ingredients
  

  • 1 cup quinoa rinsed and drained
  • 2 cans 15 oz each black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 bell peppers chopped (any color)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste

Method
 

  1. Prepare the quinoa
  2. Sauté onions and garlic
  3. Add bell peppers and cook
  4. Mix in the spices
  5. Incorporate black beans and tomatoes
  6. Pour in the vegetable broth
  7. Stir in the quinoa
  8. Taste and season
  9. Serve and garnish
