Marinate the chicken thighs in a mixture of lemon juice, olive oil, minced garlic, oregano, paprika, salt, and pepper for at least 30 minutes.
Preheat your oven to 400°F (200°C).
Place the marinated chicken in a baking dish and pour the remaining marinade over the top.
Cook the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Optional: Broil for the last 2-3 minutes for a golden crust.
Remove from the oven and let the chicken rest for 5 minutes before slicing.
Garnish with fresh parsley and serve immediately with your choice of sides.
