Mediterranean Lemon Chicken for Flavorful Feasts

Ingredients
  

  • 4 boneless skinless chicken thighs (about 1 lb)
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Marinate the chicken thighs in a mixture of lemon juice, olive oil, minced garlic, oregano, paprika, salt, and pepper for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Place the marinated chicken in a baking dish and pour the remaining marinade over the top.
  4. Cook the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Optional: Broil for the last 2-3 minutes for a golden crust.
  6. Remove from the oven and let the chicken rest for 5 minutes before slicing.
  7. Garnish with fresh parsley and serve immediately with your choice of sides.
