Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 8 ounces cheese tortellini
  • 2 cups fresh spinach roughly chopped
  • 1 teaspoon fresh dill chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Once boiling, stir in the tortellini and cook until tender.
  6. Add the chopped spinach and cook until wilted.
  7. Stir in the chopped dill and lemon juice.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with extra dill if desired.
