Ingredients
  

  • 200 g dark chocolate 70% cocoa
  • 3 large eggs
  • 50 g granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 300 ml whipping cream

Method
 

  1. Melt the chocolate and let it cool slightly.
  2. Whip the egg whites with sugar.
  3. Whisk the egg yolks and vanilla into the melted chocolate.
  4. Fold in the whipped cream.
  5. Fold in the whipped egg whites until no streaks remain.
  6. Spoon the mousse into serving dishes and chill.
  7. Serve with optional toppings if desired.
