Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste

Method
 

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  6. Pour in the chicken broth and heavy cream, stirring to combine.
  7. Add Parmesan cheese and stir until melted and the sauce thickens slightly.
  8. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  9. Return the chicken to the skillet, coating it in the sauce and spinach mixture.
  10. Simmer for an additional 2-3 minutes to allow flavors to meld, then serve immediately.
