Ingredients
  

  • 12 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1/2 cup Bailey’s Irish Cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter melted

Method
 

  1. Preheat the oven to 325°F (160°C).
  2. Prepare the crust by combining graham cracker crumbs and melted butter.
  3. Press the crust mixture into the bottom of a springform pan and set aside.
  4. In a large mixing bowl, beat the cream cheese until smooth and creamy.
  5. Add sugar, sour cream, Bailey’s, vanilla extract, and mix until combined.
  6. Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  7. Pour the filling over the prepared crust and smooth the top with a spatula.
  8. Bake for 60–70 minutes, or until the edges are set but the center is still slightly wobbly.
  9. Turn off the oven and crack the door, letting the cheesecake cool inside for 1 hour.
  10. Remove from the oven and let cool completely on a wire rack before refrigerating for at least 4 hours.
  11. Once chilled, carefully remove the sides of the springform pan and serve.
