Hearty Sausage Potato Soup for Comforting Meals

Ingredients
  

  • 1 lb Italian sausage
  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups kale or spinach chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Brown the sausage in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot, sautéing until softened.
  3. Stir in the diced potatoes and dried thyme.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Reduce the heat and simmer for about 15-20 minutes until the potatoes are tender.
  6. Stir in the kale or spinach and let it wilt for an additional 3-5 minutes.
  7. Season with salt and pepper to taste before serving.
