Spread the beetroot mixture on half of each dough circle, fold over, and seal the edges.
Heat olive oil in a frying pan over medium heat.
Cook each gözleme for about 3-4 minutes on each side, until crispy and golden.
Remove from heat and let them cool slightly before slicing.
