Flavorful Sweet Potato and Black Bean Chili Delight

Ingredients
  

  • 2 medium sweet potatoes peeled and diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper any color, chopped
  • 1 can 14.5 oz diced tomatoes, with juices
  • 2 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and bell peppers, sautéing until soft, about 5 minutes.
  3. Stir in minced garlic, cooking for an additional 1 minute until fragrant.
  4. Add diced sweet potatoes, and stir to combine with the vegetables.
  5. Sprinkle in cumin, chili powder, smoked paprika, salt, and pepper, stirring to coat.
  6. Pour in the diced tomatoes with juices and vegetable broth, mixing well.
  7. Add the rinsed black beans, stirring to combine, then bring to a boil.
  8. Reduce heat to low, cover, and simmer for 30–35 minutes, stirring occasionally.
  9. Taste and adjust seasoning if necessary, serving hot.
