Preheat your oven to 350°F (175°C).
In a skillet, sauté the chopped onion and minced garlic until softened.
In a large mixing bowl, combine the chopped spinach, sautéed onion, garlic, breadcrumbs, Parmesan cheese, eggs, salt, pepper, and nutmeg.
Form the mixture into small balls, roughly the size of a golf ball.
Place the spinach balls on a greased baking sheet, spaced evenly apart.
Bake in the preheated oven for 20-25 minutes, or until golden brown.
Remove from the oven and let cool slightly before serving.
