Flavorful Slow Cooker Chicken Burrito Bowl Recipe

Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 lime juiced
  • 4 cups cooked rice for serving
  • Fresh cilantro for garnish (optional)

Method
 

  1. Prepare the slow cooker.
  2. Add the chicken to the slow cooker.
  3. Combine the black beans, corn, and salsa.
  4. Sprinkle in the spices: cumin, chili powder, garlic powder, and onion powder.
  5. Pour the lime juice over the mixture.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Shred the chicken with forks.
  8. Serve over cooked rice.
  9. Garnish with fresh cilantro and lime wedges (if desired).
