Roasted Cauliflower Satay with Spicy Peanut Dipping Sauce made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 large head of cauliflower
  • 3 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1-2 tablespoons sriracha or hot sauce
  • 2 tablespoons chopped fresh cilantro for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cauliflower by cutting it into bite-sized florets.
  3. In a large bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Toss the cauliflower florets in the seasoning mixture until well coated.
  5. Spread the coated cauliflower on a baking sheet lined with parchment paper.
  6. Roast the cauliflower for 25-30 minutes, stirring halfway through, until deeply golden and tender.
  7. While the cauliflower roasts, prepare the spicy peanut dipping sauce.
  8. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, and sriracha until smooth and creamy.
  9. Taste the dipping sauce and adjust with more sriracha or soy sauce if needed.
  10. Once the cauliflower is roasted, remove it from the oven and let cool slightly.
  11. Serve the roasted cauliflower with the spicy peanut sauce drizzled on top or on the side for dipping.
