While the cauliflower roasts, prepare the spicy peanut dipping sauce.
In a bowl, whisk together peanut butter, soy sauce, rice vinegar, and sriracha until smooth and creamy.
Taste the dipping sauce and adjust with more sriracha or soy sauce if needed.
Once the cauliflower is roasted, remove it from the oven and let cool slightly.
Serve the roasted cauliflower with the spicy peanut sauce drizzled on top or on the side for dipping.
