Flavorful Chicken Burrito Casserole for Family Meals

Easy Chicken Burrito Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1 can 10 oz diced tomatoes with green chiles
  • 3 cups tortilla chips or crushed tortillas
  • 2 cups shredded cheese like cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped (optional)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, taco seasoning, and diced tomatoes.
  3. Layer half of the tortilla chips in a greased 9x13 inch baking dish.
  4. Spread the chicken mixture over the chips, followed by half of the shredded cheese.
  5. Add the remaining tortilla chips, followed by the rest of the chicken mixture and cheese on top.
  6. Cover with aluminum foil and bake for 25 minutes. Then uncover and bake for another 10-15 minutes until bubbly and golden.
  7. Sprinkle freshly chopped cilantro before serving, if desired.
