Ingredients
  

  • 4 cod fillets 6 ounces each
  • 1 cup breadcrumbs
  • 1/4 cup parsley finely chopped
  • 1 tablespoon lemon zest
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking dish by lightly oiling it.
  3. In a mixing bowl, combine breadcrumbs, parsley, lemon zest, garlic powder, paprika, salt, and pepper.
  4. Drizzle olive oil over the breadcrumb mixture and toss until evenly coated.
  5. Place the cod fillets in the prepared baking dish, season with salt and pepper, and then generously top with the breadcrumb mixture.
  6. Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Let it rest for a few minutes before serving.
