Ingredients
  

  • 2 medium eggplants diced
  • 1 large onion diced
  • 2 ribs of celery diced
  • 1 bell pepper diced
  • 2 cups canned diced tomatoes
  • 1/4 cup green olives chopped
  • 2 tablespoons capers drained
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Method
 

  1. Prepare the vegetables
  2. Salt the eggplants
  3. Sauté the aromatics
  4. Add the eggplants
  5. Stir in the tomatoes and simmer
  6. Add vinegar and sugar
  7. Season and adjust flavors
