Ingredients
  

  • 2 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 green onions chopped
  • 2 large eggs beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

  1. Prepare your ingredients and workspace.
  2. Heat the vegetable oil in a large pot over medium-high heat.
  3. Add the mixed vegetables and stir-fry for 3–4 minutes until tender.
  4. Push the vegetables to one side and add the beaten eggs, scrambling them until fully cooked.
  5. Add the cooked rice to the pot and mix everything thoroughly.
  6. Pour in the soy sauce and sesame oil, stirring well to combine.
  7. Season with salt and pepper, adjusting to your taste preferences.
  8. Transfer to a serving dish and garnish with chopped green onions.
