Ingredients
  

  • 1 cup white or brown rice
  • 1 lb ground beef turkey, or plant-based alternative
  • 1 packet taco seasoning
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes canned or fresh
  • 1 avocado sliced
  • ½ cup shredded cheese cheddar or Mexican blend
  • 1 lime juiced
  • Fresh cilantro for garnish

Method
 

  1. Prepare the rice according to package instructions.
  2. In a skillet, brown the ground meat over medium heat.
  3. Add the taco seasoning to the meat along with a splash of water.
  4. Stir in the black beans, corn, and diced tomatoes.
  5. Combine the cooked rice with the meat mixture in the skillet.
  6. Serve the taco rice bowl in individual bowls and top with avocado and cheese.
  7. Drizzle with lime juice and garnish with cilantro.
