Ingredients
  

  • 1 cup Arborio rice
  • 2 cups fresh or frozen peas
  • 4 cups vegetable or chicken broth
  • 1/2 cup onion finely chopped
  • 2 tablespoons olive oil
  • 1/2 cup Parmesan cheese grated
  • Salt to taste
  • Freshly cracked black pepper to taste

Method
 

  1. Heat the broth in a saucepan and keep it warm throughout the process.
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped onions until translucent.
  3. Add the Arborio rice to the skillet and stir for 1-2 minutes until it’s slightly toasted.
  4. Pour in 1 cup of warm broth, stirring gently until the liquid is mostly absorbed.
  5. Continue adding broth one cup at a time, allowing each addition to be absorbed before adding the next.
  6. When you have about 5 minutes left of cooking, stir in the peas.
  7. Once the rice is al dente and creamy, remove the skillet from heat and stir in Parmesan cheese, salt, and black pepper.
  8. Serve hot, garnished with extra Parmesan and a sprinkle of black pepper.
