Ingredients
  

  • 2 cups mixed olives
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic smashed
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon red pepper flakes
  • 1 tablespoon lemon zest
  • 2 tablespoons balsamic vinegar

Method
 

  1. Prepare the olives by rinsing and draining them.
  2. In a bowl, combine the olive oil, garlic, herbs, red pepper flakes, lemon zest, and balsamic vinegar.
  3. Add the rinsed olives to the marinade, mixing well to coat them evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight for maximum flavor.
  5. Before serving, let the olives come to room temperature.
