In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and any optional spices or currants.
Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
Pour the batter into a greased 9-inch round cake pan and smooth the top.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
