Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup unsalted butter melted
  • 1/2 cup raisins or currants

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk and melted butter.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until just combined.
  5. Fold in the raisins or currants until evenly distributed.
  6. Drop tablespoonfuls of dough onto a greased or lined baking sheet, spacing them apart.
  7. Bake for 15-18 minutes or until the cookies are lightly golden.
  8. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
