Ingredients
  

  • 1 cup dried black eyed peas
  • 4 cups vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 can diced tomatoes 14.5 oz
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Soak the black eyed peas overnight.
  2. Heat olive oil in a large pot over medium heat.
  3. Add chopped onion, bell pepper, and garlic; sauté until softened.
  4. Stir in smoked paprika and cayenne pepper; cook for 1 minute.
  5. Pour in diced tomatoes and vegetable broth; bring to a simmer.
  6. Add soaked black eyed peas; cover and simmer for 30-40 minutes.
  7. Season with salt and pepper to taste; adjust spices if necessary.
  8. Serve warm, garnished with fresh herbs if desired.
