Ingredients
  

  • 2 large russet potatoes peeled and thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives
  • 1 pre-made pie crust store-bought or homemade
  • 1 egg beaten (for egg wash)
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the pie crust on a lightly floured surface to a 12-inch circle.
  3. Layer the potato slices evenly on the crust, leaving a 2-inch border.
  4. Sprinkle cheddar and Parmesan cheese over the potatoes, adding chives, salt, and pepper.
  5. Fold the edges of the crust over the filling, pleating as you go to create a border.
  6. Brush the exposed crust with the beaten egg.
  7. Bake the galette in the preheated oven for 35-40 minutes or until the crust is golden brown and the potatoes are tender.
  8. Let the galette cool for 5-10 minutes before slicing and serving.
